Loaded Baked Potato Soup

This Crockpot Loaded Baked Potato Soup is everything you love about a fully loaded baked potato in a rich, hearty, comforting bowl of soup. Frozen hash browns slow cook all day in a creamy base of cream of chicken soup, chicken broth, cream cheese, and sharp cheddar, seasoned with ranch and finished with bacon bits throughout. Then you pile on the toppings, sour cream, more cheddar, more bacon, and green onion, and you have a soup that tastes like the best baked potato you have ever had in liquid form.

This recipe is one of those genius slow cooker ideas that sounds almost too simple to be good and then completely blows you away when you taste it. The frozen hash browns break down perfectly during the long cook time and give the soup its hearty, chunky potato texture while soaking up all that creamy, cheesy, ranch-flavored broth around them. By the time you give everything that final stir after cooking, the potatoes are soft and tender, the cream cheese has fully melted in, and the soup has thickened into something incredibly rich and satisfying.

The ranch seasoning packet is what really sets this soup apart from other baked potato soups. It adds a herby, savory tang that ties all the dairy elements together and gives the broth a bold, well-rounded flavor that goes way beyond what you would get from salt and pepper alone. This is a dump and go recipe in the truest sense and the result tastes like you spent hours in the kitchen. It is perfect for cold nights, busy weeks, and any time you want something filling and delicious with almost zero effort.

WHY YOU'LL LOVE THIS RECIPE

  • Only 10 Minutes of Prep: Add everything to the slow cooker, stir it together, set it, and walk away. That is the entire prep process. It genuinely does not get easier.
  • Incredible Loaded Toppings: Sour cream, extra sharp cheddar, more bacon bits, and sliced green onion on top turn each bowl into a fully customizable loaded soup that everyone can pile on exactly how they like it.
  • Thick, Rich, and Hearty: The combination of cream of chicken soup, cream cheese, sharp cheddar, and hash browns creates a soup that is thick, substantial, and completely filling. This is a meal on its own.

INGREDIENTS YOU NEED

Full ingredients and amounts are in the recipe card below. Read through this section for notes on each ingredient and substitution ideas.

    • Frozen Hash Browns: The potato base of the entire soup and the ingredient that makes this recipe so brilliantly easy. A 2 lb bag of shredded or diced frozen hash browns goes straight in from frozen. They cook down during the four hour cook time and become perfectly soft and tender, giving the soup that hearty, chunky potato texture that makes loaded baked potato soup so satisfying.
    • Ranch Seasoning Packet: This is the seasoning that makes this soup completely unique and so much more flavorful than a basic potato soup. A 1 oz packet seasons the entire broth simultaneously and adds a concentrated herby, savory, slightly tangy flavor that ties all the creamy dairy elements together beautifully. Do not substitute with dried herbs or plain salt and pepper. The packet does something those individually cannot.
    • Cream of Chicken Soup: Two cans of condensed cream of chicken soup add richness, body, and a savory, slightly creamy flavor to the broth right from the start. They go in undiluted and help create the thick, hearty texture that defines this soup. Cream of mushroom is a good substitute if you prefer but cream of chicken is the classic choice here.
    • Bacon Bits: Three ounces of bacon bits go directly into the slow cooker with everything else so the smoky, salty bacon flavor infuses the entire soup during cooking. More bacon bits get added on top as a finishing garnish. Use real bacon bits rather than the artificial kind for the best flavor and texture.
    • Cream Cheese: One full block of cream cheese melts into the soup during cooking and creates that silky, rich, creamy texture that makes every spoonful feel so indulgent. Cut it into chunks before adding so it melts more evenly. Full fat cream cheese gives you the best result.
    • Sharp Cheddar Cheese: An 8 oz bag of shredded sharp cheddar adds bold, tangy cheese flavor throughout the soup. It melts into the broth during cooking and also gets piled on top as a topping at the end. Sharp cheddar specifically is the right choice here because its stronger flavor stands up to the richness of the cream cheese and cream of chicken.
    • Garlic Powder: Adds a savory aromatic depth that rounds out the ranch and cheese flavors and makes the soup taste more complete and well-seasoned.
    • Black Pepper: Adds warmth and a little bite. Season to taste at the end if you like a little more.
    • Chicken Broth: Four cups of chicken broth give the soup the right amount of liquid to cook the hash browns through and create a broth thick enough to coat everything without being too thin. Use a good quality broth for the best flavor.
  • sour cream
  • shredded sharp cheddar cheese
  • bacon bits
  • green onion

TIPS FOR MAKING THE BEST CROCKPOT LOADED BAKED POTATO SOUP

  • Cut the Cream Cheese into Chunks Before Adding: Do not add the cream cheese as a whole block. Cut it into 6 to 8 pieces before adding so it melts more evenly and blends smoothly into the soup without leaving any lumps.
  • Do Not Thaw the Hash Browns: Add them straight from the freezer. They cook perfectly from frozen during the four hour cook time and actually hold their texture better than thawed hash browns, which can turn to mush.
  • Stir Well at the Beginning: After adding all the ingredients, give everything a really thorough stir to make sure the ranch packet, cream of chicken, and broth are well combined before the slow cooker lid goes on. This ensures even seasoning throughout.
  • Stir Again Thoroughly at the End: The recipe specifically calls for a good stir once everything is done cooking and that step is important. This is when the cream cheese finishes melting and blends into the broth, the shredded cheddar fully incorporates, and everything comes together into one smooth, cohesive soup. Take your time with this final stir.
  • Use Real Bacon Bits: The packaged real bacon bits found in the salad dressing aisle are a great shortcut here. Just make sure you are buying the real bacon bits and not the artificial soy-based kind, which taste completely different and will not give you that authentic smoky bacon flavor.
  • Taste and Adjust Before Serving: After the final stir, taste the soup and adjust the salt and pepper if needed. The ranch seasoning, cream of chicken, and bacon all contribute saltiness so you may not need to add much, but a little extra pepper right at the end can make a big difference.
  • Add More Broth If Too Thick: If the soup is thicker than you want after cooking, stir in a splash of extra chicken broth to loosen it to your preferred consistency. The hash browns absorb a lot of liquid during cooking so a little extra goes a long way.
  • Load Up the Toppings Generously: The toppings are what take this soup from a great potato soup to a truly loaded baked potato experience. Do not be shy with the sour cream, cheddar, bacon bits, and green onion. The more loaded the better.
  • Serve Immediately After Topping: Add the toppings right before serving each individual bowl so the sour cream stays cool and the extra cheddar melts just slightly on top of the hot soup. This gives you the best flavor and visual presentation.
  • Do Not Lift the Lid While Cooking: Every time you open the slow cooker you lose heat and steam. Leave it completely alone for the full four hours and let it do its thing.

HOW TO STORE LEFTOVERS

  • Refrigerator: Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days. The soup will thicken as it sits because the hash browns continue to absorb the broth, but a splash of chicken broth stirred in while reheating brings it right back.
  • Freezer: This soup freezes reasonably well. Let it cool completely before transferring to a freezer-safe container. The cream cheese-based broth may change slightly in texture after thawing but the flavor will still be great. It will keep in the freezer for up to 2 months.
  • To Reheat from the Fridge: Warm in a saucepan over medium-low heat, stirring frequently and adding a splash of chicken broth or milk as needed to loosen the soup back to the right consistency. You can also microwave in 60 second intervals, stirring between each one.
  • To Reheat from the Freezer: Thaw overnight in the refrigerator, then reheat on the stovetop as above. Add a splash of broth and stir well as it warms to bring the texture back together.
  • Meal Prep Tip: Store the soup and toppings separately in the refrigerator. Keep the sour cream, extra cheddar, bacon bits, and green onion in small separate containers and add them fresh to each bowl when reheating. This keeps all the topping textures exactly right throughout the week.

Frequently asked questions

Can I use diced frozen hash browns instead of shredded? Yes. Both shredded and diced frozen hash browns work great in this recipe. Shredded hash browns break down more and give you a slightly thicker, more uniform texture throughout the soup. Diced hash browns hold their shape a little better and give you more defined potato chunks in every spoonful. Both are delicious so use whichever you prefer or have on hand.

Do I need to thaw the hash browns first? No. The hash browns go straight from the freezer into the slow cooker. They cook perfectly from frozen during the four hour cook time. Thawing them first is not necessary and can actually cause them to get too soft during cooking.

Can I use a different canned soup instead of cream of chicken? Yes. Cream of mushroom is the most common substitute and works really well here. It gives you a slightly different flavor but still creates that same rich, creamy base. Cream of celery is another option that works nicely alongside the ranch and potato flavors.

Can I use freshly cooked and crumbled bacon instead of bacon bits? Absolutely and it is the better option if you have the time. Freshly cooked bacon has more texture and a deeper, smokier flavor than packaged bacon bits. Cook it until crispy, crumble it, and add it to the slow cooker at the same point the recipe calls for bacon bits.

Why is my soup so thick? The hash browns absorb a lot of the broth during cooking and the cream cheese and cream of chicken both add significant body to the soup. If it is thicker than you want, stir in a splash of chicken broth while giving it that final stir at the end. Add it a little at a time until you reach your preferred consistency.

Can I cook this on low instead of high? Yes. Cook on low for 6 to 8 hours for the same result. This is a great option if you want to start it in the morning and have it ready by dinner.

Can I add other vegetables? Yes. Diced white onion, corn, or even a handful of chopped broccoli are all great additions that fit naturally with the loaded baked potato flavor profile. Add them at the beginning with everything else and they will cook down perfectly during the four hour cook time.

How do I know when the soup is done? The soup is done when the hash browns are completely soft and tender, the cream cheese has fully melted in, and the broth is thick and creamy. Give it a big stir after the cook time and if everything blends together smoothly and the potatoes are soft throughout, it is ready to serve.

Can I double the recipe? Yes, this recipe doubles well in a large 8-quart slow cooker. Double all the ingredients and keep the cook time the same. You may need to stir a little more thoroughly at the end to make sure everything is fully incorporated in the larger batch.
