Leftovers/storage

Store any leftovers in an airtight container in the refrigerator for up to 3 to 4 days. Since this is a creamy soup with gnocchi, it will thicken as it sits, so when reheating just add a splash of broth or milk and give it a stir to bring it back to the right consistency. It reheats really well and still tastes just as good.

Frequently asked questions

Do I need to cook the gnocchi first?

No, you can add it directly into the slow cooker and it will cook perfectly in the soup. It becomes soft and absorbs all the flavor as it cooks.

You can leave it out or swap it for kale if you prefer. It adds a nice texture but is not required.

You can, but the soup will not be as rich and creamy. Heavy cream gives it that thicker and more comforting texture.
