Can I assemble this the night before? Yes, and honestly this is the best way to do it for holiday mornings. Layer everything in the slow cooker insert the night before and store it covered in the refrigerator. In the morning, pull it out, let it sit on the counter for about 15 minutes, then set it on the base and start cooking. Easy.
Can I use a different meat? Absolutely. Crumbled cooked bacon is amazing in this. Diced ham works great too and gives it a slightly sweeter flavor. You can also do a mix. Half sausage, half bacon is a crowd favorite. Just make sure whatever meat you use is fully cooked before layering it in.
Can I add vegetables? Yes! Diced bell peppers, onions, mushrooms, or spinach all work great in this casserole. Saute them first to remove excess moisture before adding them in so the casserole doesn't get watery.
Why do you layer instead of mixing everything together? Layering gives you a much better final texture. Each bite has defined layers of hash browns, sausage, and cheese rather than everything being one blended mixture. It also helps everything cook more evenly.
Can I use fresh hash browns instead of frozen? You can, but frozen is actually better here. Frozen hash browns hold their texture better during the long cook time and don't release as much moisture. If you use fresh, squeeze out as much moisture as possible first.
What size slow cooker do I need? A 6-quart slow cooker is the ideal size for this recipe. You want enough room for all the layers plus the egg mixture to pour over the top. A 4-quart will work in a pinch but it will be very full.
Can I make this on low instead of high? Yes! Cooking on low for 6 to 8 hours is a great option if you want to set it up before bed or early in the morning. The result is the same, just a slower, more gentle cook.
How do I know when it's done? The casserole is done when the eggs are fully set in the center and no longer jiggly. You can insert a knife into the middle. If it comes out clean, it's ready. The edges will set before the center, so always check the middle.
Can I double the recipe?
This recipe already makes 10 servings, but if you need more, you can double it in a large 8-quart slow cooker. The cook time may need to be extended slightly. Check for doneness at the regular time and add 30 minutes at a time as needed.
