Ingredients

Full ingredients and amounts are in the recipe card below. Read through this section for substitution tips and notes on each ingredient.

    • Frozen Hash Browns: The base of the casserole and what gives it that hearty, satisfying texture. Use shredded hash browns for the best layering. They hold their shape and soak up all the flavors from the sausage and egg mixture beautifully.

    • Ground Sausage: Adds savory, seasoned flavor throughout the casserole. Make sure it’s fully cooked before adding it in. Breakfast sausage is the classic choice here but you can use any variety you love.

    • Sharp Cheddar Cheese: Sharp cheddar gives the best flavor punch and melts into every layer perfectly. Pre-shredded works fine but shredding your own will give you an even creamier melt.

    • Eggs: The binding agent that holds everything together and gives the casserole its fluffy, custard-like texture. Use large eggs for the best results.

    • Milk: Whisked with the eggs to make the egg mixture silky and smooth. Whole milk gives the richest texture but 2% works great too.

    • Salt: Brings out all the flavors in the dish. Don’t skip it. It makes everything taste more cohesive.

    • Black Pepper: Adds a little warmth and epth to the egg mixture. Season to taste if you like a little more kick.

Tips For Making The Best Crockpot Breakfast Casserole

  1. Cook Your Sausage First: The sausage needs to be fully cooked before it goes into the slow cooker. Brown it in a skillet until no pink remains, drain the excess grease, and then layer it in.

  2. Don’t Thaw the Hash Browns: Add them straight from frozen. They will cook perfectly in the slow cooker and hold their texture much better than thawed hash browns, which can get soggy.

  3. Layer, Don’t Mix: Layering the ingredients instead of stirring them together is the key to the best texture. You get defined layers of hash browns, sausage, and cheese in every bite rather than everything blending together.

  4. Press Down Gently After Layering: After adding all your layers, give everything a gentle press down before pouring in the egg mixture. This helps the eggs saturate all the way through.

  5. Pour the Egg Mixture Slowly: Take your time pouring the egg mixture over the top so it distributes evenly through all the layers. Let it settle before putting the lid on.

  6. Don’t Lift the Lid While Cooking: Every time you open the lid you lose heat and add time to the cook. Trust the process and leave it alone.

  7. Use a Liner for Easy Cleanup: Slow cooker liners are a total game changer for this recipe. Just lift it out when done and cleanup takes 30 seconds.

  8. Check for Doneness at the Low End of the Time Range: Slow cookers all run a little different. Start checking at 3 hours on high or 6 hours on low. The casserole is done when the eggs are fully set in the center.

  9. Let It Rest Before Serving: Give it 5 to 10 minutes after cooking before scooping. It firms up slightly as it rests and is much easier to serve in clean portions.

  10. Grease the Slow Cooker: Spray the inside of your slow cooker with non-stick cooking spray before layering. This prevents sticking and makes serving so much easier.

Leftovers/storage

  • Refrigerator: Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days. This casserole reheats really well and the texture holds up great.

  • Freezer: This casserole freezes beautifully. Let it cool completely, then portion it into individual servings and store in freezer-safe containers or bags for up to 2 months.

  • To Reheat from the Fridge: Microwave individual portions for 1 to 2 minutes, or warm in a 325 degree oven for about 10 minutes until heated through.

  • To Reheat from the Freezer: Thaw overnight in the refrigerator, then reheat in the microwave or oven as above. You can also reheat from frozen in the oven at 325 degrees for 20 to 25 minutes covered with foil.

  • Meal Prep Tip: Portion the casserole into individual servings right after cooking and store them separately. Grab and reheat as needed all week for an easy breakfast on busy mornings.

Frequently asked questions

Can I assemble this the night before? Yes, and honestly this is the best way to do it for holiday mornings. Layer everything in the slow cooker insert the night before and store it covered in the refrigerator. In the morning, pull it out, let it sit on the counter for about 15 minutes, then set it on the base and start cooking. Easy.

Can I use a different meat? Absolutely. Crumbled cooked bacon is amazing in this. Diced ham works great too and gives it a slightly sweeter flavor. You can also do a mix. Half sausage, half bacon is a crowd favorite. Just make sure whatever meat you use is fully cooked before layering it in.

Can I add vegetables? Yes! Diced bell peppers, onions, mushrooms, or spinach all work great in this casserole. Saute them first to remove excess moisture before adding them in so the casserole doesn't get watery.

Why do you layer instead of mixing everything together? Layering gives you a much better final texture. Each bite has defined layers of hash browns, sausage, and cheese rather than everything being one blended mixture. It also helps everything cook more evenly.

Can I use fresh hash browns instead of frozen? You can, but frozen is actually better here. Frozen hash browns hold their texture better during the long cook time and don't release as much moisture. If you use fresh, squeeze out as much moisture as possible first.

What size slow cooker do I need? A 6-quart slow cooker is the ideal size for this recipe. You want enough room for all the layers plus the egg mixture to pour over the top. A 4-quart will work in a pinch but it will be very full.

Can I make this on low instead of high? Yes! Cooking on low for 6 to 8 hours is a great option if you want to set it up before bed or early in the morning. The result is the same, just a slower, more gentle cook.

How do I know when it's done? The casserole is done when the eggs are fully set in the center and no longer jiggly. You can insert a knife into the middle. If it comes out clean, it's ready. The edges will set before the center, so always check the middle.

Can I double the recipe?

This recipe already makes 10 servings, but if you need more, you can double it in a large 8-quart slow cooker. The cook time may need to be extended slightly. Check for doneness at the regular time and add 30 minutes at a time as needed.
