Shrimp scampi is one of those dishes that feels light but still full of flavor, and this crockpot version makes it so easy to put together. The garlic, butter, and lemon come together into a simple sauce that coats everything perfectly.
This recipe is buttery, garlicky, and has that fresh lemon flavor that makes shrimp scampi so good. The sauce comes together perfectly and soaks into the pasta for a really smooth and flavorful dish.
It is super easy to make and perfect for when you want something that feels a little lighter but still really satisfying. It is one of those meals that looks impressive but is actually so simple.

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Since this is a lighter butter based sauce, it may separate slightly when it cools, so when reheating just warm it gently and give it a stir to bring everything back together. It still tastes really good the next day.
The shrimp will turn pink and slightly firm when it is done. You do not want to overcook it, so once it reaches that point it is ready.
The lemon juice and garlic are what really bring everything together. It might seem simple, but that combination gives it that signature flavor.
Linguine or spaghetti works really well because it holds onto the sauce, but you can use whatever you have.
