Pasta Fagioli Soup Crockpot

Ingredients

  • 15.5 oz drained can of cannellini beans
  • 24 oz jar of marinara sauce
  • 10 oz can of Rotel Mild
  • 15.5 oz drained can of kidney beans
  • 1 cup of diced white onion
  • 1 cup of chopped carrots
  • 1 cup of chopped celery
  • 1 lb of cooked ground beef
  • 3 cups of beef broth
  • 1 teaspoon of Italian seasoning
  • 1 teaspoon of garlic powder
  • 1 cup of uncooked ditalini pasta

How to make

  1. Add to the slow cooker:
    • cannellini beans
    • marinara sauce
    • Rotel Mild
    • kidney beans
    • white onion
    • carrots
    • celery
    • cooked ground beef
    • beef broth
    • Italian seasoning
    • garlic powder
  2. Mix everything together until combined
  3. Set the slow cooker on high for 4 hours or low for 6 hours
  4. Once it is done, mix everything together again
  5. Add uncooked ditalini pasta
  6. Put the lid back on and let the pasta cook for an additional 20 minutes
  7. Serve and enjoy

Leftovers/storage

Store any leftovers in an airtight container in the refrigerator for up to 3 to 4 days. Since this soup has pasta, it will continue to absorb liquid as it sits, so when reheating just add a little broth or water and give it a stir to bring it back to the right consistency. It reheats really well and still tastes just as good the next day.

Can I use a different type of pasta?

Yes, you can use other small pasta shapes if you do not have ditalini. Just keep the size similar so it cooks evenly.

Yes, you can leave out the ground beef and it will still be a hearty soup. It turns into more of a vegetable and bean based version that is still really good.

You can adjust the beans based on what you have. Using a mix gives it a better texture, but it will still taste great either way.
